Hier, j&rsquo;ai fait des raviolis chinois ou ji\u00e3ozi pour la premi\u00e8re fois. J&rsquo;en avait d\u00e9j\u00e0 mang\u00e9 dans des restaurants asiatiques et cel\u00e0 fait un moment que l&rsquo;id\u00e9e de faire des home made chinese dumplings me tentait.<\/p>\n<p style=\"text-align: justify;\">Le terme \u00ab\u00a0raviolis\u00a0\u00bb d\u00e9signe toute pr\u00e9paration constitu\u00e9e de p\u00e2te \u00e0 base de farine de bl\u00e9 tendre ou de riz, farcie de l\u00e9gumes, de viande, et ou de frommage. Ils peuvent \u00eatre cuits \u00e0 la vapeur, bouillies ou frits.<\/p>\n<p style=\"text-align: justify;\">Les raviolis sont aussi vieux que l&#8217;empire romain mais leur origine commune demeure myst\u00e9rieuse. Actuellement, il en existe plusieurs vari\u00e9t\u00e9s venant des quatres coins du monde: raviolis italien, ravioles du Dauphin\u00e9, banh cuon (vi\u00e9tnamiens), mandu (cor\u00e9ens), gyozas (japonais), empandas (br\u00e9siliens), momo (n\u00e9palais) et ji\u00e3ozi ou raviolis chinois. La recette que je viens partager avec vous aujourd&rsquo;hui s&rsquo;agit de ces derniers, les raviolis chinois.<\/p>\n<p style=\"text-align: justify;\">Les raviolis chinois sont apparus il y a environ 1800 ann\u00e9es. Cela se passe en Chine bien \u00e9videmment. Un medecin du Dynastie Han qui, \u00e0 son retour \u00e0 son village natal apr\u00e8s sa retraite, avait remarqu\u00e9 que tout le monde souffrait de famine et de douloureuses engelures sur les oreilles. Il a donc ressenti le besoin de les aider et, afin d&rsquo;atteindre le maximum de patients il a concoct\u00e9 des dumplings \u00e0 base de viande et d&rsquo;un m\u00e9lange d&rsquo;herbes inspir\u00e9 par une pr\u00e9paration de m\u00e9decine chinoise traditionnelle con\u00e7ue pour le traitement d&rsquo;engelures. Cette recette refl\u00e8te parfaitement les principes de la medecine traditionnelle chinoise qui est fond\u00e9e sur le traitement et la pr\u00e9vention des maladies \u00e0 travers la nourriture plut\u00f4t qu&rsquo;\u00e0 travers l&rsquo;usage de produits artificiels.<\/p>\n<p>Aujourd&rsquo;hui, les raviolis chinois ne sont plus consomm\u00e9s pour des fins m\u00e9dicinales. Mais ils sont devenus un plat iconique de la cuisine chinoise avec plusieurs vari\u00e9t\u00e9s.<\/p>\n<p style=\"text-align: justify;\">En jetant un coup d&rsquo;\u0153il sur quelques recettes de raviolis chinois, j&rsquo;ai \u00e9t\u00e9 tr\u00e8s contente de lire certaines affirmations enthousiastes par rapport \u00e0 la facilit\u00e9 de la pr\u00e9paration des raviolis chinois. Apr\u00e8s les avoir essay\u00e9, je ne serais pas tout \u00e0 fait d&rsquo;accord avec cela. Il faut absolument savoir que, si vous pr\u00e9parez la p\u00e2te vous-m\u00eames, faire des raviolis chinois est un long process. Surtout si vous \u00eates quelqu&rsquo;un de tr\u00e8s occup\u00e9. D&rsquo;ailleurs, ce n&rsquo;est pas un plat que les chinois pr\u00e9parent r\u00e9guli\u00e8rement chez eux. En bas \u00e0 droite, bouillis et \u00e0 gauche frits.<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1336\" src=\"https:\/\/numidyum.files.wordpress.com\/2018\/09\/img_4118.jpg?resize=900%2C597\" alt=\"IMG_4118\" width=\"900\" height=\"597\" \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1338\" src=\"https:\/\/numidyum.files.wordpress.com\/2018\/09\/img_4115.jpg?resize=900%2C579\" alt=\"IMG_4115\" width=\"900\" height=\"579\" \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1337\" src=\"https:\/\/numidyum.files.wordpress.com\/2018\/09\/img_4119.jpg?resize=900%2C597\" alt=\"IMG_4119\" width=\"900\" height=\"597\" \/><\/p>\n<p>&nbsp;<\/p>\n<h3>Ingr\u00e9dients:<\/h3>\n<p>Pour la p\u00e2te:<\/p>\n<ul>\n<li>200g de farine,<\/li>\n<li>100ml d&rsquo;eau chaude,<\/li>\n<\/ul>\n<p>Pour la farce:<\/p>\n<ul>\n<li>Un onion<\/li>\n<li>La moiti\u00e9 d&rsquo;un gros chou blanc ou un petit, entier,<\/li>\n<li>2 carottes de taille moyenne,<\/li>\n<li>1 c.\u00e0.c de gingembre frais rap\u00e9 ou en poudre,<\/li>\n<li>2 gousses d&rsquo;ail \u00e9cras\u00e9es,<\/li>\n<li>1 c.\u00e0.s d&rsquo;huile de s\u00e9same ou d&rsquo;huile de coco , sinon un peu d&rsquo;eau fera l&rsquo;affaire si vous suivez un r\u00e9gime sans huile,<\/li>\n<li>3 c.\u00e0.s. de sauce soja,<\/li>\n<li>Sel et poivre.<\/li>\n<\/ul>\n<p>Pour la cuisson:<\/p>\n<ul>\n<li>De l&rsquo;huile v\u00e9g\u00e9tale,<\/li>\n<li>Des graines de s\u00e9same,<\/li>\n<li>De l&rsquo;eau, beaucoup d&rsquo;eau!<\/li>\n<\/ul>\n<h3>Instructions:<\/h3>\n<ol>\n<li><strong>Pr\u00e9parez la p\u00e2te:\u00a0<\/strong><\/li>\n<\/ol>\n<ul>\n<li>Dans un r\u00e9cipient, mettez la farine et l&rsquo;eau chaude, m\u00e9langez et p\u00e9trissez pendant 5 minutes. Attention cependant, il ne faut pas trop p\u00e9trir votre p\u00e2te.<\/li>\n<li>Une fois votre p\u00e2te est lisse, couvrez-l\u00e0 et laissez reposer pendant au moins 30 minutes,<\/li>\n<li>Formez un boudin avec votre p\u00e2te, ensuite, roulez-le jusqu&rsquo;\u00e0 ce qu&rsquo;il ait une \u00e9paisseur d&rsquo;environ 2-3 cm. D\u00e9coupez-le en petits morceaux que vous \u00e9talerez un par un, assez finement\u00a0pour obtenir des galettes d&rsquo;environ 13 cm de diametre. Mettez les de cot\u00e9.<\/li>\n<\/ul>\n<p><strong>2. Pr\u00e9parez la farce :<\/strong><\/p>\n<ul>\n<li>Coupez votre oignon finement et faites-le revenir dans de l&rsquo;huile de s\u00e9same ou de l&rsquo;huile de coco et un peu de sel. Ne salez pas trop votre farce car la sauce soja que vous allez y ajouter plus tard est d\u00e9j\u00e0 tr\u00e8s sal\u00e9e,<\/li>\n<li>\u00c9pluchez et r\u00e2pez les carottes. Coupez le chou tr\u00e8s finement. Ajoutez-les \u00e0 l&rsquo;oignon avec l&rsquo;ail, le gingembre et le poivre, Couvrez et laisser cuire \u00e0 petit feu pendant environ 15 minutes,<\/li>\n<li>D\u00e8s que la farce est cuite, ajoutez-y la sauce soja.<\/li>\n<\/ul>\n<p><strong>3. Farcez vos raviolis chinois :<\/strong><\/p>\n<ul>\n<li>D\u00e9posez de la farce dans le centre de chaque cercle\/galette: l&rsquo;\u00e9quivelent d&rsquo;une petite cuill\u00e8re \u00e0 caf\u00e9,<\/li>\n<li>Rabbatez les bords de la p\u00e2te en sorte \u00e0 enfermer la farce dedans formant ainsi une demi lune.<\/li>\n<\/ul>\n<p><strong>4. Faites cuire vos raviolis chinois :\u00a0<\/strong><\/p>\n<p>Vous avez trois options en ce qui concerne la cuisson de vos raviolis chinois. Vous pouvez les faire cuire \u00e0 la vapeur, les bouillir ou les frire. Personnellement je les pr\u00e9f\u00e8re bouillies.<\/p>\n<p>Si vous choissisez de faire bouillir vos raviolis:<\/p>\n<ul>\n<li>Jetez-les, un par un, dans une marmite remplie d&rsquo;eau en pleine \u00e9bulition sur feu vif, en principe ils flotteront,<\/li>\n<li>Une fois leur couleur devienne un peu translucide, au bout de 3 \u00e0 5 minutes, retirez les pour les servir chaud.<\/li>\n<\/ul>\n<p>Si vous pr\u00e9ferez les frire :<\/p>\n<ul>\n<li>Faites chauffez un peu d&rsquo;huile dans une po\u00eale et jetez-y des graines de s\u00e9same ainsi que les ravioli et laissez-les dorer pendant environ 30 secondes sans les tourner,<\/li>\n<li>D\u00e8s que le fond de vos raviolis est dor\u00e9, ajoutez un demi verre d&rsquo;eau et couvrez,<\/li>\n<li>Laissez l&rsquo;eau s&rsquo;\u00e9vaporer compl\u00e8tement avant de retirer vos ravioli de la po\u00eale.<\/li>\n<li>Servez chauds.<\/li>\n<\/ul>\n<p>Pour une cuisson \u00e0 la vapeur vous aurez besoin d&rsquo;un panier vapeur en bamboo:<\/p>\n<ul>\n<li>Placez quelques feuilles de laitue ou autres feuilles de plante comestibles dans le panier vapeur et disposez vos raviolis dessus,<\/li>\n<li>Placez votre panier vapeur sur de l&rsquo;eau bouillante, sur feu vif, et laissez vos raviolis cuire pendant 5 minutes,<\/li>\n<li>Servez vos raviolis pendants qu&rsquo;ils sont chauds.<\/li>\n<\/ul>\n<p>Servez vos raviolis bien chaud, c&rsquo;est tr\u00e8s important car sinon la p\u00e2te durcira.
